Back in those days when someone said “all races” it almost certainly was understood to mean something like “English, Irish, French, Italians, Greeks, Poles, and Jews with a smattering of American blacks and Indians.” Remember this was back when it was common for people to talk about, for example, the “English race” as Churchill did.
As for “all religions,” that undoubtedly meant Presbyterians, Methodists, Lutherans, Baptists, Catholics, Jews, etc. etc. To suggest to someone in 1940s America that it included not just the aforementioned Christians and Jews, but Muslims, Hindus, Buddhists, Wiccans, Scientologists, Satanists, and so on would have resulted in a blank stare, if not an invitation to a fist fight.
Betcha this song is going to be used at some point (if it hasn’t been already) as proof positive that America was always meant to be what Theodore Roosevelt warned against, “a polyglot boarding house..”
